Winners of the fourth organic cheese contest Biocaseus 2008
In the fourth edition of the international organic cheese contest, Biocaseus 2008, 112 cheeses were entered from 50 dairy firms, half from Italy and the other half from Germany, Switzerland, France and Greece, underlining the international interest of the contest.
Because of the large variety of cheeses taking part, 4 subcategories were created in addition to the normal categories: one for ricottas, two for semi-hard cheeses made from cow milk and goat/sheep milk and one for Parmigiano Reggiano in the hard cheese category.
The category of fresh stretched cheeses was joined with that of the mozzarellas.
The cheeses were sampled by 32 judges from the following groups: the "Istituto per la Qualità e le Tecnologie Agroalimentari di Veneto Agricoltura" ( Institute for Quality and Food Farming Technology of Veneto Agriculture ) and members of the group of experts in sensory analysis from the same institute; delegates from ONAF Organizzazione Nazionale Assagiatori Formaggio (National Organization of Cheese Tasters) from Veneto and Friuli and Emilia Romagna; representatives of the PDO (Protected Designation of Origin) Cheese Consortium; buyers of dairy products from Italian and foreign distribution organisations; consumers trained in tasting.
Every participant cheese, its name carefully hidden, was judged by at least 6 judges, who valued the cheese according to the following prerequisites: odour, taste-aroma, composition, shape, colour, openness (occhiature) and texture.
The rating of the aesthetical aspects of the cheeses was made at the end so that judges were not influenced by the smell and taste of the cheeses.
The scoring system used attributed 60% of the total to the smell, odour, taste-aroma and composition of the cheese and 40% to the aesthetic characteristics and texture of the rind and the cheese.
The final score was therefore the average of the result of the 6 tests. All the data were then submitted to statistical analysis with determination of the standard deviation with the purpose of checking whether some anomalous datum influenced the result.
